Muddy Fork Bakery is committed to using organic and locally-grown ingredients. Our grains are all organic, grown mostly at Janie’s Farm in Ashkum, IL and mostly ground in our stone mill, fresh for each bake. We use locally raised / produced eggs, honey, meat and vegetables in our breads and pastries. We bake our bread in a brick, wood-fired oven on our homestead in northeast Monroe County. We specialize in naturally-leavened (sourdough) bread, a process that requires patience and time, but results in superior flavor, texture, nutrition, and keeping quality of the bread.

Fire Toasted Granola
We toast our granola in the receding heat of our wood-fired oven. Four days after baking bread, the oven falls to below 350 degrees, and we begin a full day of granola baking. Cooked slowly at a low temperature, the granola is baked to perfection and falls off the pans in nice chunks. We use local Hunter’s honey, high-quality whole almonds that we slice just before baking, along with organic oats organic oats from Janie’s Mill, and organic canola oil in the perfect proportion to yield a granola that is sweet, crunchy and healthy.

The same recipe as our fire-toasted granola, but in place of almonds, we use organic sunflower seeds and pumpkin seeds.

We took our fire-toasted granola recipe and swapped out all the oats for nuts and seeds. An added bonus – the new recipe comes off the pan in one big sheet, so we package this in big chunks.

Fire-Toasted Muesli
Our muesli stands apart because we toast our mixture of organic oats, organic sunflower seeds, pumpkin seeds and New Communities’ pecans until they have a nutty aroma. Then we add organic raisins. This is our favorite breakfast to eat with fruit and homemade yogurt, or soaked overnight in milk. At 50% seeds and nuts, and without oil or sweeteners, our toasted muesli is healthy, high in protein and keeps you energized all morning.

We took our granola recipe and added egg and flour in as small a quantity as possible to hold the bars together and maintain the crunchy texture of our granola. To that we added chocolate chunks, creating the best granola bar you’ve ever tasted.

Real rye bread like our New York grandparents ate. 40% rye (freshly milled), 60% white flour, sourdough bread with caraway seeds. We love the flavor of freshly ground rye flour so we use plenty of it, and we don’t cover it up with too much caraway.
