Croissants are made by wrapping a piece of butter in a simple bread dough, and then creating layers by repeatedly rolling the package and folding it in thirds. The dough will be prepared in advance, and at the beginning of the workshop, each pair of participants will pound the butter flat and make the butter/dough package. While the dough rests between each rolling and folding, we will give you a tour of the bakery, an introduction to grains and flour, and prepare the pizza lunch. After lunch you will make cookies and delve deeper into selected topics with a slideshow and discussion. When it is time to shape the croissants, we will have a selection of fillings for making croissants of your choosing.
We will send each pair of participants home with your croissants, recipes, and instructions for how to make them again at home.
This workshop is usually offered on a Sunday and runs 10 am to 4:30 pm.
